Ingredients
For the Meat Sauce:
- 1 large carrot, grated
- 1/2 large onion, grated
- 2 garlic cloves, crushed
- 1 bay leaf
- 2 pinches dried oregano
- 1 tbsp Worcestershire sauce
- 300g minced beef
- 1 tbsp tomato puree
- 2 tsp red wine
- 1 tin chopped tomatoes (400g)
- 50ml milk
For the Cheese Sauce:
- 25g butter
- 25g plain flour
- 300ml milk
- 1 pinch ground nutmeg
- 60g Cheddar cheese, grated
- 30g Parmesan cheese, grated
To Layer the Lasagne:
- 6 ‘non pre-cook’ lasagne sheets
For the Salad:
- 1 tsp Dijon mustard
- 1 tbsp white wine vinegar
- 1 round lettuce head (rinsed and dried)
Additional Ingredients:
- Salt and freshly ground black pepper
- Olive oil
Instructions
Meat Sauce:
- Grate the carrot and onion, and crush the garlic.
- Fry the carrot, onion, and garlic in olive oil until soft. Season with salt and pepper.
- Place the minced beef into the pan, season with dried oregano, and fry for 30 seconds.
- Add the tomato puree, Worcestershire sauce, and a bay leaf.
- Pour in the red wine, stir in the chopped tomatoes and milk, then simmer and set aside.

Cheese Sauce:
- Melt the butter in a saucepan.
- Add the flour and stir into a paste.
- Gradually add 1/3 of the milk, whisking continuously. Add the rest of the milk a third at a time, whisking as you go.
- Season with salt, pepper, and a pinch of ground nutmeg. Cook for another minute, then add grated Cheddar and Parmesan cheese. Stir and remove from heat.
Assembling the Lasagne:
- Spoon half the meat sauce into a baking dish.
- Place sheets of lasagne on top.
- Pour just under half of the cheese sauce over the pasta.
- Spoon in the remaining meat sauce and add another layer of lasagne sheets.
- Pour over the rest of the cheese sauce and top with grated Parmesan. Sprinkle oregano and season.
